Anyway - the pie! While the Cinnamon Roll top looks impressive, it truly does not take much more effort than would be required for a traditional apple pie. The only difference, you divide the dough 40/60 and then use the smaller piece to create your "cinnamon rolls." Before chilling the smaller section of dough, rather than forming a traditional "disk" you shape it into a small rectangle to allow for ease with forming your "cinnamon roll."<br />

I liked the outline of this recipe, because it flowed well from one step to the next - make the dough, chill the dough for 30 minutes in the fridge, remove the smaller piece of dough to create your "cinnamon roll" and then place that in the freezer while you roll out and shape the bottom crust - forming it, and then placing it into the freezer. Prepare your apples and sugar/spice filling, out of the freezer with the bottom crust, fill with apple mixture and out with the cinnamon roll to slice and roll, creating your top crust. No waiting between steps, no rushing from one thing to the next; easy-peasy.<br />

for Father's Day I decided I would make my husband, and our boys a big breakfast -- since the boys have always had weekends with their mom, and we've always had weeknights (until the close of this school year) the big breakfast is something we've rarely been able to do, which is a shame. because big breakfasts are one of life's greatest joys -- at least where I'm concerned.<br />

Since I pie so infrequently at this point, I wanted to be certain to update the page with the two pies I worked on this weekend. The first for a new human! Reed Eleanor -- born just eight days ago! (they grow up so fast) and the second, well, the second to use up the other half of the dough from the first, and to put use to the rhubarb in our garden.<br />

In the midst of my excitement, I realized I had already blogged two eerily similar sets of photos. <br />
<br />
A quick look at the page, and come to find out, the <a href="http://www.marthastewart.com/314610/bacon-and-onion-quiche" target="_blank">quiche</a> that I was making for Reed's family, had already been posted <a href="http://my52pies.blogspot.com/2013/02/week-32-egg-pie.html" target="_blank">here</a>, and the sour cream rhubarb, while I was certain I'd never made/posted the recipe, reminded me of something when I was able to finally sample it -- not until I came back to the page to find this <a href="http://my52pies.blogspot.com/2014/08/sour-cream-apple-pie-with-streusel.html" target="_blank">pie</a>, which has a lot of similar characteristics, although -- I'll just say, from what I can recall of the apple, I prefer the custard/flavor combination of the rhubarb.<br />

On to the Rhubarb Sour Cream Pie, and my disdain for Lynne Rossetto Kasper. You don't really need to know that I cant stand Lynne, but -- man, I can't stand her. It started when I heard her give terrible instructions on mixing/making granola, and how to get it to cluster -- then I tried to make a simple Farmer's Cheese using one of her recipes, DISASTER. There have been a few other moments where I sit in the car shaking my head while listening to her on NPR, but it was really the epic cheese fail, since that time, I've just decided she doesn't know what the hell she is talking about -- can't stand her. #endrant</div>

While I like to joke about LRK, I do still follow her newsfeed on Facebook, and when I saw this <a href="http://www.splendidtable.org/recipes/sour-cream-rhubarb-pie" target="_blank">pie</a>, I knew I wanted to try it. There were a few tweeks to the cooking time, and the pie probably could use a little less sugar, but overall -- Lynne may have saved herself (at least where I'm concerned) with this recipe. </div>

I did add time to the final cooking of this pie -- I think it's important to be able to pick up a slice of pie with one hand and have the ability to carry/eat it without the assistance of a plate/fork -- it's my inner fat girl, or maybe it stems from my need for things to be orderly -- gluttony or neurosis -- we'll never know. <br />
<br />
In total, I'd say I added a solid 11 minutes to the final bake. If you've ever made a custard pie, you know the amount of give/jiggle, you can work with for the consistency you prefer. That said, you may not need the additional baking time, but I knew I did.<br />

one last note on this pie, if you're looking for that tart Rhubarb flavor, this isn't it the pie for you. The custard steals the show -- it's "really balanced," says Rowan, our 15 year-old, but the Rhubarb certainly isn't prominent in the pie.<br />

the second pie I made this weekend was a <a href="http://www.marthastewart.com/340930/fruit-pie-with-crumb-topping" target="_blank">Blueberry Crumble</a> -- something, I've never made or thought of (because as you may know from past posts, I'm a double-crust-pie-purist), but with an additional crust left from the Sour Cream-Raisin pie prep, and blueberries in season; this was the perfect fit for the day.<br />

In the last two weeks I have canned one bushel of peaches, a batch or two of roasted red peppers, one bushel of tomatoes, and roughly an additional 18-20 lbs of tomatoes from our own garden, which have gone towards making salsa for the year. (In the next two weeks I can another two bushels of tomatoes) <br />

all of this canning brings attention to what is left in my pantry, and at this time I've got two quarts of sliced/peeled apples that are creeping up on their one year mark (please, please, please, always use up those canned goods within a year!) <br />

Andy and I trekked up to Michigan this weekend to pick up super (and I mean SUPER) cheap bushels of peaches, $20! The whole thing was a bit of a disaster, really. We left in the wee hours of the morning to get to the farm by 8:00 am as requested -- we arrived, to an empty homestead with no farmer. <br />

I called the farmer to locate him and he told me he was fresh out of peaches, despite confirming my order earlier in the week. After some talking the farmer decided he could sell me bushels he had taken to a market 20 minutes away -- good news! <br />

The pie is made by caramelizing the peaches in the oven with 2T of sugar -- baking for 30 minutes at 375 -- you blind bake the shell at the same time and let both cool while you form a custard using 2 egg yolks, 3T flour, a pinch of salt, 1/2c of sugar and 1/3c of cream. Slice the cooled peaches, arrange them in the pie shell and pour the custard over, bake for 40-50 minutes at 325. </div>

It's really a special treat for our Willems family to see one another -- at least when my Dad's sister, (Aunt) Jen, and brother (Uncle) Chris are involved -- my Aunt resides in Peoria, IL and my Uncle in Canute, OK -- but every so often we do get to see them. Tonight was a fun time with family, some pizza and photos of our late grandparents that we hadn't seen before -- naturally I brought along a pie. <br />

These handpies, they're a great way to use up some preserves and put'em in action. Our son, Rowan, did most of the work on these -- and as we quickly found, he did much better sealing the pies then I did. It was an ooey-gooey-mess and both of us thought we had made a mistake half way through the recipe, but turns out, they clean up nicely in the oven. And, incidentally they make a great breakfast, one where everyone in my family will be putting to use some of the "jam." </div>

There was a Bloody Mary bar, there were Mimosas, Crepes, Eggs Florentine, freshly made Cinnamon Raisin Bread, and Chocolate Covered Strawberries -- and there was quiche! I chose two recipes that looked like fun, one was adapted to have a <a href="http://www.kingarthurflour.com/recipes/gluten-free-pie-crust-recipe" target="_blank">gluten free crust</a>, very simple to do; the crust recipe is one I have used before, one that ends up flaky and "doesn't taste gluten free," it comes from King Arthur. <br />

as for we Akers, it seems that one part of the family remains in Fort Wayne (my husband, his siblings, etc.) and the other half of the us are in Indy -- now that we're past all the weddings, and hopefully have plenty of time before our next round of funerals, we decided to pull together for some food, and some booze -- BOOZE -- plus, well, pie. I had made this at Thanksgiving, in a pie plate rather than the tart and the filling was more loose than I had liked -- this round with the tart pan I made the mistake of not lining the plate and lost a significant amount of the filling while it oozed and goozed out of the bottom of the pan while baking; this made for a much more firm pie, but made the finished product a little dry. <br />

I've been thinking about how to recap the blog/pie project and one of the things that comes to mind are pies that I made twice, cherry being one of them. the others? <br />

<li>Banana Cream (one posted, one "free pie" that was made during one of the two-three pie weeks) </li>
<li>Butterscotch (one posted, one not -- because I nearly set my kitchen on fire while making it and had to quickly make another pie for that week's "pie-date")</li>
<li>Key Lime, both of which were posted, but the first I wasn't thrilled with and the second had a crust variation of gingersnap rather than good ol'graham cracker. </li>
<li>Pear Raspberry, one "official" pie project pie, and the other donated to a fundraiser/not posted.</li>
<li>Apple, Apple, Apple -- because there are so many variations! One of which with ginger, I wish I had gotten around too, but did not; maybe this fall. </li>

I've yet to make a sweet potato or cottage cheese pie, both of which were on my list -- and funny story about that cottage cheese pie, I was just reading an article about the <a href="http://www.indystar.com/article/20130626/OUTTOEAT02/306260010/Pineapple-Pleasure-wins-Indianapolis-Star-pie-contest" target="_blank">Indy Star pie contest</a> and saw a mention of this old-timey pie. I'll have to give it a go, maybe next week, maybe after the project, we'll see ...<br />

on the the actual pies I've made in the last two weeks. The first was made for a night with my two favorite "Sara's" on the planet. One of the Sara's was doing a detox/cleanse of sorts and so I tried to find a recipe that fit the bill. Lean proteins, no sugar, or grains -- that was the challenge -- and <a href="http://beautydetoxfoods.com/raw-key-lime-pie/" target="_blank">this pie</a> served its purpose. the next pie on my list was mulberry. Andy and I have three mulberry trees in our tiny little yard and this pie is quite honestly the first time we've used the berries for anything. I'm not too fond of the trees, or the berries, but <a href="http://allrecipes.com/recipe/mulberry-pie/" target="_blank">this pie</a> was SO good. I also happened to use a different America's Test Kitchen "standard" double crust recipe. The crust had shortening and butter in it, which I typically don't like -- but this recipe produced a mildly sweet crust that rolled out with ease. </div>

i found <a href="http://www.countryliving.com/recipefinder/butterscotch-pie-3891" target="_blank">this pie</a> online. the thought of butterscotch pie makes my poor teeth hurt and i had a lot of trouble finding a recipe i was excited about, but this seemed to be the right mix of sugar and egg-yolk, not to much of either. <br />

there are a few fun twists with the pie, the first being that the whipped cream has a teaspoon of honey, which i've never seen. also the vanilla extract that i used for this pie was one i had made a few months ago. <br />

i loved the flavor of my extract, it had a much more rich taste than anything i've had in the past. i guess extracts are another item we'll stop buying -- they're so simple to make and from what i can tell worth the effort! ... although, to be honest, there isnt much effort in dipping split beans in a bottle of vodka and letting it soak for a few months, ha-ha...<br />

i may soon follow-up with a banana-butterscotch pie recipe that i found in a moosewood cookbook that a co-worker brought to me this week -- we'll see. <br />

and i was finally able to find/gather enough <em><strong>local</strong></em> rhubarb (i simply cannot justify buying rhubarb in the grocery) for a pie ... and one small batch of jam for me. i also bought a few starts for the ol'yard, which andy kindly planted for me yesterday. <br />

i almost wanted to call everyone who has received a chocolate pie from me and apologize for not making them *this chocolate pie. <br />

i would suggest making this with a child -- its the perfect filling to lick off the spoon or snag a little finger of and with a stand mixer, some measuring/pouring could easily make it seem like they've done the bulk of the work. <br />

the pie is made with one teaspoon of baking soda, 2/3c. of boiling water, 3/4c. of molasses, an egg, brown sugar and some butter. to make the filling you dump the boiling water onto the baking soda, which causes it to pop and fizzle. so fun! <br /><br />then you whisk in the molasses and the egg and pour this very liquidy substance into an unbaked pie shell. cover that with the topping and it comes out of the oven with a firm filling and very crumby (not in a bad way, he heh) top.<br />

the pie has *just enough sweetness and the perfect bite of molasses. i liked it. andy did too, although while he was eating it he quipped: "i like this, but i can see where some people wouldn't..." <br />
